Taboule is one of my favourite salads. I love to eat it with pitas and hummus. Mmmm. Thierry and I had it along side our lobster mentionned in the previous post. Perfect combo.
Here's a simple and easy recipe.
What you'll need:
1 bunch fresh parsley, coursely chopped
1 tomato, finely chopped
1/2 red onion, finely diced
Juice of 1/2 lemon
Juice of 1 lime
Salt and Pepper, to taste
1/2 cup of couscous
1 cup of chicken broth
1. Boil the the chicken broth. Remove from heat and add the couscous. Let sit for 5 minutes and then fluff with a fork.
2. In a bowl, mix the parsley, tomato, green onions, lemon juice, lime juice. Let sit for 10 minutes. Add the couscous, salt and pepper and toss everything together.
