A little taste of Heaven

I treated myself to three of my top favourite foods yesterday: tacos, corn, and key lime pie. Oh ya! I was oowing and aawing at every bite and thinking that this would have to be my last meal, hands down. And on top of that, these made the absolute perfect, quick and easy summer meal.

Here is a simple recipe for key lime pie that will have you saying "OH MY, MY!"


KEY LIME PIE WITH MERINGUE TOPPING


What you'll need:

3 cups of condensed milk
3 limes, zested
3/4 cup of fresh lime juice
1/2 cup of greek yogurt ( you can also use sour cream)
4 egg whites
6 tbs of sugar
9 inch graham pie crust

1. Heat oven at 350 degrees.
2. In a bowl, mix the condensed milk, lime juice, zeste, and yogurt. Pour the mix into the pie crust.
3. In a metal bowl, whip the egg whites until it foams. Slowly mix in the sugar and whip until peaks form.
4. Gently top the pie with the meringue and bake in the oven for 10 minutes. Let chill in the refrigerator for atleast 1 hour before devouring.
