KEFTA TAGINE

If you're anything like me, you buy ground meat and end up doing the same tired recipes, spaghetti, taco's, and shepard's pie.  This is a Moroccan dish that I love and can't get enough of.





Meat

1 lb ground beef
1 onion, finely chopped
2 garlic cloves, finely chopped
salt and pepper
2 tablespoons olive oil


Sauce

2 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons ground cumin
1/2 teaspoon ground cinnamon
1 tablespoon ground paprika
1 28oz can tomato sauce
1 teaspoon hot pepper flakes or harissa
4 tablespoon coriander, finely chopped
4 eggs


1. Heat oil in an oven safe pan, sauté onions for 5 minutes. Add garlic and heat for 1 minute. Add ground meat and cook thoroughly. Transfer meat in a bowl.

2. Heat oil in the pan and sauté for 5 minutes. Add garlic, cumin, cinnamon, and paprika and cook for an additional 2 minutes. Add the tomato sauce and hot pepper flakes and let simmer for 15-20 minutes.

3. Add the meat to the tomato sauce and simmer for 5 minutes. Stir in the coriander and carefully drop the four eggs over the sauce. Place in oven for 8 minutes at 400 F.


Serve with bread.
